A Caribbean Food Night was held at Fiona’s house. A wonderful selection of food with Caribbean flavours, all home cooked by members, was provided. The Mains selection a choice of:
Jerk Chicken, Rice & Beans, Pork Curry, Sticky Jerk Salmon on a Mango Slaw, Fry Bodi, Plaintain & Bean Burgers with a salad.
After a Caribbean Personalities Quiz (thanks to Michelle Howes for passing on) the Sweets selection was:
Temblique ( a Coconut Custard Pudding) and Pineapple in Coconut and Rum Sauce
Comment was made on how so many of the ingredients featured in both the savoury and sweet dishes – yet tasted quite different. Everyone agreed it was an excellent way to pass a cool, wet early autumn evening.
